Aranista (Trachanas)


  • 1 kg wheat flour
  • water enough to get a smooth dough
  • milk
  • salt to taste



Put the flour in a basin and add — little by little — some water while making small ball-like pieces of dough. Immerse your hands in a bowl of water and sprinkle some on the flour while pinching off pieces of dough. As soon as the ball-like dough pieces are ready, add them to a pan of boiling water and cook for a few minutes. Add some fresh milk (preferably goat’s milk) and a little salt to taste and serve like porridge.
