Fava (split peas)


  • 2 cups of Iraklian fava
  • 5 cups of water
  • a little salt to taste
  • olive oil to serve
  • lemon juice and chopped onion to serve (optional)


Bring the fava to the boil and keep removing the froth that accumulates on top. Then reduce the heat, cover the pan and let the fava cook slowly for about an hour without stirring. Add the salt towards the end, remove from fire and stir the mixture with a wooden spoon till it becomes smooth and velvety. Serve with a little olive oil and add lemon juice and chopped onion depending on taste.
